You take one week off and BOOM, a year flies by. Sorry world, your sweet addiction of Not So Culinary Graduate was halted for a year, an entire freaken year! Well I hope you all did something fun in that time, I know I did… I think.

I’ve progressed my running career. I’m now a running machine! I’ve ran several half marathons, a bunch of 10 milers, countless 5ks and now I am prepping for the Chicago Marathon in October, HOW COOL IS THAT!??!?!?! Look at that batter

I moved too, that’s cool right!?!?! Not far, just down the road in Pennsylvania from where I was living, but the house is so much cooler, and the kitchen! Actually the kitchen is still in the works, I only have one cookie tray that fits in the oven, but the stove is nice, brand new Viking stove.

Does moving feel weird to anyone else? You stay in one house for a while, you get used to where everything is, the smell, the squeaks, it becomes so familiar, and then you move. I am still trying to figure out where the silverware drawer is, and if my house is haunted or if it’s just the wind.

Speaking of changes, Not So Culinary Graduate might be changing a little to. While I love bringing you a different recipe twice a month, we might switch it up now and then and do a review or a rant. I’m not saying I won’t throw in a drink recipe or the cookie of the week recipe, I’m just saying be prepared for anything!

Pre-oven

In the meantime to keep tradition alive and the drinks flowing, this week I made a Fudgy white chocolate brownie. The tops and the side were crispy and slightly crunchy while the inside was sweet, gooey, and fudgy! The white chocolate was an interesting contrast from my typical regular chocolate, throw some chocolate chips on top and you got the best white brownie ever!

Fudgy White Chocolate Brownies

Ingredients:

1/2 Cup unsalted butter

12oz or 1 bag of white chocolate chips

3/4 Cup granulated sugar

2 eggs

1/2 Teaspoon of salt

1 Teaspoon vanilla

1 Cup all-purpose flour

Directions;

  1. Melt butter and cholate chips in a microwave safe bowl. Try this 30 seconds at a time to not burn the butter.
  2. Add sugar, eggs, salt and vanilla and mix until incorporated.
  3. Mix in flour till combined.
  4. Spread into a Creased 8” by 8” pan for 25 minutes or until toothpick inserted in the middle comes out clean. Let cool before cutting.

Death to Cupcakes: A New Era Begins (Chocolate Peanut Butter Cupcakes)

Last year, I called it. Just saying.

Its official Crumbs, one of the nation’s largest cupcakes chains, has closed its doors. It seems Americans are tired of this once trend. We no longer feel the need to have a portion sized, personal cake with frosting decorated to wow us. We no longer want art on a platter, we no longer feel the need to pay $3.00 for a cupcake. Americans are tired of your shit cupcakes, you’re out.

So that leaves me wondering, what’s the next trend? Cheesecake on a stick would be awesome! But then we would have to find portable ways to keep it cool. Gourmet Brownies, that’s something I can get on board with. What about good ol’ fashion cookies? Nah, too… ordinary.

Chocolate and peanut butter go together like Bonnie and Clyde, Thelma and Louise, Tom and Jerry and Beyoncé and Jay-z. It just works, the salty and sweet, sweet and salty, throw a little sea salt on top and you have an edible euphoria unlike any other.

According to The thechocolatestore.com Americans consume 2.8 billion pounds of chocolate each year, which is approximately 11.6 pounds per person.  On the other hand according to the National Peanut Board (yes this exists), Americans spend $800 million a year on peanut butter, that’s a lot of jars! Obviously this paring is not going out of style any time soon!

Courtney’s coworker requested chocolate peanut butter cupcakes for his birthday and I am always more than happy to deliver. I made a rich chocolate cupcake using both dark chocolate coco powder, and regular coco power. I also decided that this needed a peanut butter filling, so a mock Reese’s filling was pumped into the middle of these suckers, topped off with a peanut butter butter cream.

Chocolate Peanut butter cupcakes:

If you are allergic to peanuts, these will surely kill you. But if you are a chocolate peanut butter fanatic, these are sure to melt your heart!

Makes 24 cupcakes

The cake was adapted from: Hersey’s “Perfectly Chocolate” chocolate cake recipe

2 cups sugar

1 3/4 cups all-purpose flour

1/4 cup Hersey’s Dark Chocolate Cocoa powder

1/2 cup Hersey’s cocoa powder

1 1/2 teaspoon baking powder

1 1/2 teaspoon baking powder

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

 

Filling taken from a Wilton recipe:

1 1/2 Tablespoons warm melted butter

1/2 cup peanut butter room temp

3/4 cup confectioners’ sugar

 

Peanut-Butter, Butter Cream adapted from the wonderful Martha Stewart:

2/3 cup creamy peanut butter

1 stick of butter, softened

2 cup confectioners’ sugar

2 tablespoons whipping cream

 

 

 

Directions:

Cake:

  1. Heat oven to 350°F
  2. Mix together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin).
  3. Pour into cupcake liners or greased cupcake tins, fill 3/4 full.
  4. Bake for 20 minutes or until a knife inserted in the middle come out clean

Filling:

  1. Core the cupcakes using either a knife or a cupcake corer if you have one
  2. Melt the butter and mix into the peanut butter and confectioner sugar till combined
  3. Resist the urge to eat all of it
  4. Using a spoon, or a bag fill the cored cupcake with this mixture.

Frosting

  1. Mix butter and peanut butter together, add in confectioners’ sugar, and add in whipping cream.
  2. Whip till desired consistency
  3. Again resist the urge to eat it all
  4. Either pipe, or spread on cupcakes.

 

 

 

 

Running Away (Gluten Free, Flourless Peanut Butter Chocolate Chip Cookies)

Heart pounding, I run. My lungs, once full of air are now deflated and scrambling, but still continue. My shins absorb the impact of the worn concrete, walked by countless people, yet run by me. Aching arms continue to sway mechanically back and forth, they scream for a break, but none comes. Head held high and with determination holding me from looking back, I run.

I like to run. Trust me it’s not as bad as it sounds. As a former 3 sport college athlete I need something to keep my adrenalin going, something to hold hope that there will be one more game. I run because I can, it keeps me in shape, it clears my mind. The benefits of running are strongly outweighed by the cons and keep me happy, healthy and strong.

Last Sunday, April 27, 2014 I ran my first 5K. It was the Philly Run Wild through the Philly Zoo all to benefit the orangutans. First of all you have to understand that 3.1 miles for me is a warm up. I can easily run for 7+ miles without skipping a beat. In fact I think I held myself back a little during this race because I was still budgeting my energy for a longer run. But it was so much fun! The next day I came back to work and signed up for another 5K at the Working Dog Winery in East Windsor NJ!

With 5k fever on my mind I thought about eating cleaner, which is rough when your two best friends are Ben and Jerry’s, and the new Core Flavors, MMMM let me tell you, such an amazing game changer. Anyways, yes it’s true I don’t eat as clean as I should. I also have a small problem with gluten, or rather it has a small problem with me. I eat it, it kicks my ass, you get the picture. So I decided to cut out as much gluten as possible, and add more protein to my diet to hopefully gain those sexy running muscles (HA!).

With protein on my mind, and gluten out of my body I set out this week to develop a cookie that I won’t feel too bad eating, Ha, yeah right. While this recipe does not contain flour, it does contain a cup and a half of sugar, so you win some, you lose some. But on the positive side I do feel better when I grab 2 for breakfast.

Flourless, Gluten Free, Peanut Butter Chocolate Chip Cookies

In the past I have made a gluten free, soy free, lactose free cookie similar to this, but not quite. If your dietary needs are all that and more please refer to Kim’s Kookies!

Makes about 36 cookies

Ingredients

2 cups natural crunchy peanut butter

1 ½ cups sugar

2 large eggs, beaten

1 teaspoon baking soda

1/2 teaspoon salt

1 bag dark chocolate chips

  1. Preheat oven to 350 degrees
  2. Put peanut butter, sugar, beaten eggs, baking soda and salt into a large bowl and mix.
  3. Mix in chocolate chips.
  4. Scoop into tablespoon sized bowls and place 2 inches apart on parchment paper lined cookie trays.
  5. Bake for 10-12 minutes, or until they start to golden.

Confessions of a Lazy Baker (Oatmeal M&M Cookies)

4 million dollar, 4 million, that’s how big my mistake was at work this week. Needless to say I am stressed, and when I’m stressed I eat. On Monday I found myself pacing back and forth outside of a conference room because I wanted left over cookies from their lunch meeting. There were no leftovers.  I raced up and down the aisles at work to get a small bite of chocolate, no one had any. When I was stressed and needed it the most my work let me down.

I decided I was going to make a sweet treat for me, I mean everyone at work. I also lost a bet to one of the departments and promised them cupcakes. But the thing is, on Tuesday when I came home from the gym, I realized I did not have enough butter for a butter cream frosting. I also did not have any cream cheese for a cream cheese frosting. And on top of all of that it was 8:30 pm, I was not going out to get anything. So I settled with cookies.

What I really wanted to make was double chocolate chunk espresso cookies. Well, let me tell you, I did not have anything to make that. No espresso, no Dutch processed coco, and not enough butter. This whole baking thing was starting to stress me out almost as much as my 4 million dollar mistake.

TO THE INTERNET! I don’t often borrow recipes from the internet but when I do I make sure the recipe is legit. I borrowed Chewy Oatmeal M&M cookies from Sally’s Baking Addiction, AND MAN DID THEY COME OUT WONDERFUL! I made two batches, one for my work fellows and one for the house. For the first batch I followed the recipe to a T. I was pleased how they came out however the cinnamon was throwing me off, something with the cinnamon and the chocolate was not working for me. However it did take me 3 cookies to decide this. For my second batch I dropped the cinnamon and added another teaspoon of vanilla. These came out much better for my liking. Chewy, soft, hearty with the oatmeal, and still sweet with M&M’s thrown in. A perfect distressing snack.

Chewy Oatmeal M&M cookies

Adapted from Sally’s Baking Addiction

Makes roughly 24 cookies

Ingredients

1/2 Cup unsalted butter, room temp

3/4 Cup brown sugar

1/4 Cup granulated sugar

1 Large egg

3 Teaspoons vanilla

1 and 2/3 Old Fashioned rolled oats

1 Cup all-purpose flour

½ Teaspoon baking soda

A bag of M&M added to taste (small or large does not matter, I used large because again, I did not have small)

 

With a stand mixer cream the softened butter and the sugars, add the eggs and vanilla and mix.

Beat in the oats, flour, and baking soda until combined. Stir in the M&Ms/

Preheat the oven to 350. Line pans with parchment paper and bake for 10 minutes or until golden

To the girl who gave me advice (baking myths tackled)

“If you wear your pajamas inside out and backwards it will snow.”

Mrs. Poinsett my second grade teacher would tell us this daily in winter, and being a snow enthusiast, I listened. Let me tell you how hard it is to zip an onesie inside out and backwards… Have you ever tried to take off a wet wetsuit? How about ever tried to hook a tiny necklace clasps with fake nails? Have you ever sneezed spraying  purple tie dye powder all over your mothers freshly cleaned kitchen; then tried to clean it  up and found out it just stains everything when you get it wet? Oh come on I can’t be the only one that has happened to!! My point is it’s close to impossible.

How did this myth or superstition come into practice? What started this phenomenon that now has children morphing into contortionists to zip their onesies? Some myths out there are so ridiculous. If I step on a crack, I can guarantee I will not break my mother’s back.  And if I stare at the microwave while its running my eyes won’t turn green and glow at night (trust me I tested this daily as a child, don’t get your hopes up).

The topic of baking does not escape the rapidly running rumors and myths. This topic actually sparked my interest because in a class I took (Writing about Food, at Cedar Crest College); a girl had the audacity to tell me my cookies would be better and softer if I stored them with a piece of bread. A piece of bread, A PIECE OF BREAD!!! What the hell would a piece of bread do? How dare she question my supreme baking abilities, who was she to question my authority!!! I’ll attack this myth later. Before I go on another rant about how much this upset me…

Baking Myths Tackled!

Myth: Shorting instead of butter will make cookies fluffier.

Answer: Sort of. It depends how much of a butter expert you are.

Right out of the fridge butter is a solid, while right out the microwave butter is a liquid; and at room temperature butter is an odd mixture of both. In order to get butter right for cookies it has to have a certain consistency that is somewhere in between a liquid and a solid. Shorting has the correct consistency all the time and does not need to concern itself with the troubles of room temp vs. liquid state of butter.

Another reason that shorting produces a fluffier cookie is butter contains water. Shorting contains, well you don’t want to know, just know that there is no water. By containing no water, cookies with shortening are guaranteed to always stand a little taller than those made with butter.

Myth: All the alcohol in my chocolate stout cake will bake out in the oven

Answer: Eat the whole cake and you might start to get a buzz, or diabetes.

It is believed that alcohol will bake out because it has a lower boiling point than water does, but that does not mean that all of the alcohol will bake out. There can still be up to 50% of the alcohol remaining. You would have to bake a cake for over three hours to get the cake down to 5% alcohol.

I majored in psychology in college, but I’m about to go all science on you. Alcohol can bind with both fat and water molecules. Binding to the fat molecules gives the food the flavor of the alcohol, while binding with the water makes it almost impossible to get rid of.  When water and alcohol bind they form an azeotrope, and when you boil or bake this mixture the ratio of the alcohol will always stay the same. Unless you boil out all of the liquid, but no one like a dry cake.

Myth: Baking soda and Baking Powder can live forever with the cockroaches.

Answer: While baking soda can be passed down from generation to generation, baking soda only has a shelf life of about a year (which makes me think I should restock the one in my baking supply shelf).

While baking soda is sodium bicarbonate which means when it is introduced to liquid and an acidy ingredient it bubbles which make your cakes rise. While baking powder contains sodium bicarbonate it also contains an acidifying agent and a drying agent. When baking power is added to dough it is activated by the heat of the oven.

So how do you test if your baking powder is ready to erupt? Since it is activated by heat and liquid add 1 teaspoon of baking powder to hot water. If it bubbles, it’s still fresh, If not (like I fear mine will do),  time to run to the store.

Myth: Salted Butter doesn’t spoil when it is not refrigerated

Answer: disgustingly true.

I have an aunt who doesn’t refrigerate her butter and it always look like something I just sweated out and congealed. Needless to say unrefrigerated butter grosses me out.

The reason that salted butter does not spoil is the salt. It contains so much salt that it inhibits the growth of bacteria. However unsalted butter, which I prefer, will spoil in about a week if left out to fend for itself.

Just to be safe, please, always put the butter away.

Myth: Why something is baking in the oven, opening the oven will ruin it.

Answer: Depends on what you are baking, but no for the most part

Mom this one is for you. When making cupcakes, no opening the oven will not cause them to not rise, however if you are making a soufflé I promise I will not open the door. Delicate things such as a soufflé are harder to preserve and they could flop if the door is open.

Myth: Putting a slice of bread in a sealed container with your cookies will keep them soft.

Answer: She was right.

It kills me to say this. Yes Amber you are right. Putting a slice of bread in with your cookie will make them soft. BUT WHY, WHYYYYYYY?!?!?!

Cookies contain sugar, more sugar than breads with yeast. The sugars in these cookies are “hygroscopic” which in English means that they draw water out of the air into the sugar structure. Bread (white, wheat or rye) are not hygroscopic and evaporates its water into the air.  When a bread and cookie meet in the same environment the cookie starts taking water from the air, and the bread starts giving water to the air. So the Cookie gets soft and the bread gets hard.

Bitch.

Unpopular Opinion: I LOVE THE SWEAT!! (chocolate chip banana bread)

Ninety degrees and sunny, I love it. The sun slowly turning skin to leather, I love it. Sweat dripping from my body, I love it. Yes I am one of them, I am a summer worshiper. While most people morph into lobsters, and crawl around grouching about how burnt and hot they are, I tend to jump around embracing my inner firecracker.

Growing up in Jersey the summer always consisted of my mom complaining about the 108% humility and redoing her flat lifeless hair into perfect curls at least three times a day. My father, on the other hand, is where my approach to the summer came from. My father, if not at work, would spend the day bear footed in the garden or catching leathery skin on the boats all day.

Brown sugar and butter

One thing my family could always agree on was the fresh pick of summer. During summer our garden turned into Wonderland, and walking out the backdoor was falling down the rabbit hole. Colors glistened in the sunlight and water droplets, living illusions of rainbows lay hidden under every petal. There were rows upon rows of bushy carrot tops, hundreds of long green slender string beans, cucumbers whose vines reached across the earth, like a cat waking up from an afternoon nap. The zucchini as long, and heavy, as metal baseball bats and the tomatoes the size of softballs to complete the game.

The things that came out of these marvels could make even the pickiest person love their veggies. Homemade tomato sauces and pizza sauces, glazed carrots, Italian string beans in a red tomato sauce, and of course zucchini bread.

LETS GET BAKED

The breads of summer were always my favorite. Zucchini bread was the most popular in my household do to the sheer quantity o f Zucchini we had growing in the garden. My mother had a recipe for everything. But this zucchini bread was unlike anything I have ever had in my life. Somehow the outside of this bread was crunchy, while the inside moist and light. While the zucchini flavor could be tasted, you could also taste the sweet labors of summer. I have yet to get my fingers on this aged recipe card, but one day, one day it shall be mine… until then…

My second favorite summer bread that my mom would make was banana bread. The only reason we would have banana bread was if I did not eat the bananas my mom bought at the farmers market that week, and if that happened it ended in a shouting match, rather than a bread baking festival like I had hoped. I was often more scared of banana bread than happy to see it because if often reflected the agony and lecture that I had to go through.

As the years wore on I have come to love banana bread and have even tried to adapt a crispy outside similar to that of the zucchini bread.   Today I had no sugar, but many bananas that needed to be put out of their misery. Instead of white sugar I used brown giving this bread a bit of a sweeter taste.  I made chocolate chip banana bread, as well as chocolate chip peanut butter. These breads had a crunchy top a slight banana taste and a very sweet base. By far this banana bread takes the cake 100% in my book!

LOOK AT THAT GOODNESS!!!

Mini Chocolate Chip Banana Bread

Ingredients:

3/4 Cup Brown Sugar

1/2 Cup unsalted butter, at room temp.

2 Eggs

1 Cup, or 2 medium bananas mashed

1/2 Teaspoon vanilla

1 ½ All-purpose flour

1/2 Teaspoon baking soda

1/2 Teaspoon salt

1 Cup semi-sweet chocolate chips

1 Cup peanut butter chips (optional)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Preheat a mini loaf pan. If you don’t have one you can use a standard loaf pan or you could buy one here.
  3. With a stand mixer combine sugar and butter in bowl at medium speed, until creamy.
  4. Add eggs and continue beating, scrape down side of bowl as needed.
  5. At low speed beat in bananas and vanilla.
  6. Beat in the rest of the ingredients at low speed.
  7. Stir in the chocolate chips and the optional peanut butter chips
  8. Spoon batter into prepared pans. Bake 35-40 minutes or until toothpick inserted in the center comes out clean.
  9. Let stand for 5 minutes before removing from pans.
  10. Scarf all down while warm, because let’s face it that is when they are the best.
  11. I mean, wrap each one individually in plastic wrap. Store in a cool place, preferably the refrigerator.

Taking on the controversies: Chocolate or Vanilla

Vanilla with choclate frostingIt is the ultimate culinary showdown, the battle of all battles, the controversies of all controversies. Which would win: chocolate or vanilla?
Oddly enough, chocolate and vanilla were introduced to the modern world at the same time. Hernán Cortés in 1520 brought the chocolate and vanilla spices back from the Aztecs to Spain, almost spontaneously the controversy started. Well, not quite.
Before discovered by Cortés, Aztecs used coco beans as a form of currency, 100 beans could buy a good sized turkey. The Aztecs even believed that coco beans had divine properties, similar to many women’s feelings about chocolate once a month. When good ‘ol Cortés first tried chocolate he described it as “a bitter drink for pigs”, but after it was mixed with cane sugar it spread like wildfire across Spain.
While chocolate blossomed and spread over Spain, vanilla remained centralized in Central America. Why you may ask? Because that was the only place it could be successfully grown. When vanilla grows it produces a flower and only if that flower is pollinated by a certain type of bee will it produce beans. It wasn’t until 1841, when a French slave girl discovered that vanilla could be hand pollinated, therefore produced globally and used in abundance. Today we have vanilla everything: vanilla cupcake, vanilla ice cream, vanilla candles, vanilla body spray, vanilla soaps.
In a way, vanilla won. Vanilla has psychological effects that can calm you down and can prevent you from getting over anxious, it is the number one ice cream flavor in the world, and it is my mom’s favorite cupcake flavor.

Today I decided to test out a few things. My half birthday was April 18, and my mom sent me some cool baking supplies that she found. I got a rubber coated whisk, a bowl scraper and a heat resistant mat, all in pink, my favorite color. Also on my half birthday, my homemade vanilla extract was done sitting!!! After two months of waiting what a better way to try out some vanilla cupcakes than use homemade vanilla!!!
Making homemade vanilla extract is pretty simple, and can be cost effective. Vanilla extract is two beans per every 4 ounces of vodka, that’s it, nothing fancy just beans and vodka. Vanilla beans in quantities greater than 2 can be found online at Amazon. Twenty-four beans can set you back as little as sixteen dollars, and 4 ounce jars can also be found online for as little as nine dollars for a 12 count. Cheap vodka can be used for this, the cheaper the better! McCormick vanilla extract can cost up to ten dollars for a 3 ounces bottle. When made at home each bottle comes to costing around four dollars per 4 ounce bottle.
To make your vanilla extract take two vanilla beans and split them long ways, and then cut them in half. Next submerge the four pieces of vanilla beans into vodka in a four ounce glass container. Place your vodka and bean mixture in a dark cool place for about 2 months. Once a week shake the containers for a few seconds and then put them back. That’s it, in two months you did it! You created your very own homemade vanilla.

Anyways back to the cupcakes. These cupcakes are basic beginner style cupcakes, nothing fancy, anyone can do it. I decided to pair them with a chocolate frosting so the whole chocolate vs. vanilla controversy could come to life in my cupcake.
This chocolate frosting was probably the best tasting chocolate frosting ever, but one problem, its heavy. It was extremely hard to pipe this frosting out. I would use this frosting again, but I would use it for a cupcake filling, not a frosting. If anyone has a fabulous light chocolate frosting and they are willing to share, please, I am accepting donations.

This vanilla cupcake with chocolate frosting is the reason that there is a controversy over which flavor is better. The cupcake itself is air. The vanilla flavoring comes through very well, it is sweet but not candy land gone suicidal sweet, with undertones of the cake my mom made for my eight birthday party. The frosting on the other hand, it might as well be chocolate fudge. This is a chocolate lovers dream! With just cocoa powder, confectioners’ sugar and butter, the chocolate comes to life. It is sweet, rich and smooth. I was going to drizzle the cupcake with white chocolate but an incident with a plastic bag and the microwave said that milk chocolate would have to suffice.

Fool proof Vanilla Cupcakes: Makes 12
Ingredients:
1/2 Cup softened butter
1 Cup sugar
2 Eggs
2 Teaspoons vanilla extract
1 ½ Cups all-purpose flour
1/2 Teaspoon baking powder
1/4 Teaspoon salt
2/3 Cup cold milk
Directions:
1. Preheat oven to 350 *F
2. Cream together butter and sugar.
3. Add in eggs one at a time, mixing after each addition.
4. Mix in vanilla.
5. In a separate bowl, stir together all dry ingredients.
6. Mix wet ingredients to dry.
7. Add butter and milk, Mix until combined.
8. Bake 18-20 minutes or until the tops are slightly golden.
Chocolate Frosting: NOTE comes out heavy, see warning in paragraphs above
Ingredients:
3 cups confectioners’ sugar
3/4 cup unsweetened cocoa powder
1 stick unsalted butter, softened
4 tablespoons heavy cream
1 teaspoon vanilla
Directions:
1. Sift sugar and cocoa together in larger bowl
2. In another bowl mix together 4 tablespoons heavy cream, vanilla and butter, beating till smooth.
3. Add sugar and cocoa mixture 1 cup at a time until all combined.
